Pumpkin Gingerbread

Very Yummy!!

3 cups sugar
1 cup vegetable oil
4 eggs
2/3 cup water
1 can pumpkin puree
2 tsp ground ginger
1 tsp ground allspice
1 tsp ground cinnamon
1 tsp ground cloves
3 1/2 cups flour
2 tsps baking soda
1 1/2 tsp salt
1/2 tsp baking powder


Preheat oven to 350 degrees. Lightly grease 2 loaf pans ( I did one loaf & 12 muffins)

In a large mixing bowl, combine sugar,oil & eggs;beat until smooth. Add water & beat until well blended. Stir in pumpkin, ginger, allspice, cinnamon & cloves.
In med bowl combine flour, soda, salt, & baking powder. Add dry ingreds to pumpkin mixture & blend just until ingreds are mixed. Divide batter between prepared pans. Bake in oven until toothpick comes out clean, about 1 hour.
(I also added raisins & pecans, this recipe has so much flavour, can't wait to make it again.)
